Superfood Salad with Apple & Pine Nuts

Still not quite sure what to bring along on Christmas Day? You’re in luck – this is the perfect summer salad that is sure to be a crowd pleaser!

I’ve combined some of my favourite everyday superfoods into one big salad. Baby romaine lettuce leaves form the base of this salad. Romaine lettuce is also known as cos lettuce and is packed with nutrition. It is a source of vitamin K, potassium, vitamin C and A.

This salad serves roughly 4 people, so feel free to increase the ingredient quantities to feed more of your family and friends!
