Serves: 4 people
3 corn cobs
1 tbs ghee
1 mango, peeled and diced
½ red capsicum, finely diced
¼ red onion, finely diced
½ cup fresh coriander, roughly chopped
Juice from 1 lime
1 tbs extra virgin olive oil
½ tsp sea salt
Heat the ghee in a large fry pan over a high heat.
Add the corn cobs and cook them for 10 minutes.
Make sure the heat is high and you continue to turn the corn cobs.
Remove from the pan and allow to cool before cutting off the corn from the cob.
Add the corn to a bowl along with all of the remaining ingredients.
