2 heads of broccoli (approx. 500g)
1 onion, finely diced
2 cloves garlic, minced
25g fresh ginger, finely grated
1 red chili, finely diced
2 tbs coconut oil
1 tbs fish sauce
1 tbs tamari sauce or coconut aminos
Juice of 1 lime
15 snow peas, sliced thinly
Handful fresh mint, chopped
Cut broccoli into large pieces and add to food processor. Blend for 1 minute until mixture resembles breadcrumbs.
Heat coconut oil in a large fry pan and add onion, garlic, ginger and red chili. Cook for 5 minutes until soft and caramelized.
Add broccoli, fish sauce, tamari sauce and cook for a further minute.
Stir through lime juice, snow peas, mint and remove from the heat.
Serve topped with extra chopped chili and fresh mint.
