I was experimenting with a new pesto tonight and it was so good that I had to blog about it straight away! It’s a super quick recipe, that is so yummy and very versatile.
What you’ll need:
200g activated pecans*
one large bunch of fresh basil leaves
1/4 clove of garlic crushed
1/3 cup of extra virgin, olive oil
2 tablespoons of white wine vinegar
good pinch of salt and pepper
How to put this all together:
Place all of the ingredients into a blender. Blend until it forms a chunky paste. Have a taste to see if it needs an extra splash of vinegar or an extra pinch of salt. Its now ready to use, I put it on top of grilled chicken that I wrapped in cos lettuce leaves (see picture), it was so tasty!
* Activated Pecans
You don’t have to use activated pecans if you can’t get hold of them. You could dry roast some pecans and use them instead. For those that are wondering what activated nuts are….They are basically nuts that have been soaked for 24 hours and then dried. This process makes the nuts much more digestible, especially for people that normally have trouble with nuts.
