Spiced Walnut & Date Bliss Balls

Ingredients

Makes: 25 bliss balls

Time: 1 hour (+2 hours in the fridge to firm up)

200g dates

100g sultanas

1 teaspoon of vanilla powder*

1 teaspoon of cinnamon

1 teaspoon of allspice

1/2 teaspoon of ground cloves

zest and juice of 1/2 lemon

200mls hot water

50mls coconut oil

150g almond meal

100g walnuts

 

Instructions

25 bliss balls

1 hour (+2 hours in the fridge to firm up)

To a large bowl add the dates, sultanas, vanilla powder, cinnamon, allspice, ground cloves and the juice and zest of half a lemon.

Add the hot water and mix together until the dried fruit is well coated in the spices.

Put the bowl aside and let it stand for 30 minutes, allowing the dates and sultanas to absorb some of the liquid.

While you’re waiting for the dried fruit to soak, add the walnuts to a blender and blend until you have a crumb like texture.

Pour the walnut crumbs out onto a flat plate or board and put aside for later.

Now add the dried fruit and spice mixture to the blender and blend until it forms a smooth paste.

Pop this paste back into the same bowl it came out off and to this add the coconut oil and almond meal.

If it’s a cool day you will need to melt your coconut oil over a low heat first and then add it to the bowl.

Mix all this together until well combined and now get ready to roll some bliss balls!

I like to use a teaspoon to make sure all my bliss balls are roughly the same size.

Using the teaspoon grab a small amount of the mixture, roll it between your hands until it forms a small ball, then roll it in the walnut crumbs on the plate.

The bliss ball should be roughly the size of a cherry tomato.

Once its been rolled in the walnut crumbs place it on a flat tray.

Continue this process until you have used up all of the mixture.

Pop the tray in the fridge to allow the bliss balls to firm up.

After a couple of hours they should be ready to eat or can be stored in a container in the fridge for up to a week (if they last that long!).

* Vanilla Powder: I use the Loving Earth Vanilla Bean powder that you will be able to buy at a health food store. If you can’t find any simply replace it with 1 vanilla bean pod (obviously only using the inside of the pod!).
